At home, my mother sometimes make us prawn in oyster sauce which is easy to make and quite delicious on its own. When we came to Tokyo, we saw some pretty prawns and figured we could try cooking them in oyster sauce like mother did. So on our first try, we made it the simplest way to make the dish, with the ingredients consisting of only oyster sauce, prawns, onions, garlic, ginger and salt.
The next time we made it though, we used the recipe found in bbcgoodfood.com and we knew this was a winner! The recipe incorporated three ingredients that we love: aubergine, bell peppers and spring onions. I’m definitely making the dish using this recipe for my mother one day!
